On the 3rd day of Xmas my longarmer gave to me - the best advice - to press/iron your seams as you piece. Try not to twist your seams - if you press them one way, try to make sure when you piece additional blocks together, that the direction you pressed that seam, is the way it continues to lay after sewing that section together.
Borders, I also have found - if you can press those seams out towards the outer edge of the quilt, the borders themselves will lay flat. The only reason I break that rule, is if there is a lighter colored border, and it needs to be pressed to the dark.
*Irons - I would not suggest getting a Rowenta iron if you are in the market for a new iron. The first iron my mom had when I started quilting was a Rowenta - that thing must have lasted like 2 decades. Now, I have gone through about 3 Rowenta irons I feel like in about a year. Kind of ridiculous. Instead ... check out these irons:
